Stuffed Chili Cheese Tomatoes

A breakfast treat, or an appetizer? … you decide!

Ingredients:

  • 200 grams Landana Goat with Chili (SAMBAL)
  • 4 tomatoes
  • Salt and freshly ground pepper
  • A handful of shell removed sunflower seeds
  • 2 Tsp fresh chopped basil
  • 1 cup sour cream
  • Arugula (garnish)
  • 1 Tbsp butter

Preparation and Cooking:

  • Preheat the oven at 400° F.
  • Wash the tomatoes and chop off the tops.
  • Hollow the tomatoes and save the fluids in a bowl.
  • Sprinkle the insides of the tomatoes with salt and pepper (to taste).
  • Cut the Goat with Chili into little pieces.
  • Mash the sunflower seeds in a bowl and carefully mix in the cheese and the basil leaves.
  • Add the sour cream and flavour it with freshly ground pepper.
  • Set the tomatoes with the open side up in an oven dish.
  • Fill the hollowed tomatoes with the cheese mixture and bake them for 20-25 minutes.
  • Garnish with some arugula.
