Stuffed Chili Cheese Tomatoes
A breakfast treat, or an appetizer? … you decide!
Ingredients:
- 200 grams Landana Goat with Chili (SAMBAL)
- 4 tomatoes
- Salt and freshly ground pepper
- A handful of shell removed sunflower seeds
- 2 Tsp fresh chopped basil
- 1 cup sour cream
- Arugula (garnish)
- 1 Tbsp butter
Preparation
and Cooking:
- Preheat the oven at 400° F.
- Wash the tomatoes and chop off the tops.
- Hollow the tomatoes and save the fluids in a bowl.
- Sprinkle the insides of the tomatoes with salt and pepper (to taste).
- Cut the Goat with Chili into little pieces.
- Mash the sunflower seeds in a bowl and carefully mix in the cheese and the basil leaves.
- Add the sour cream and flavour it with freshly ground pepper.
- Set the tomatoes with the open side up in an oven dish.
- Fill the hollowed tomatoes with the cheese mixture and bake them for 20-25 minutes.
- Garnish with some arugula.
