Thyme Baked Vacherin Mont d’Or
~A meal for 4


Ingredients
1 Mont d’Or cheese (pre-order from The Cheese Man), room temperature
A few sprigs of thyme, cut into short lengths
1 garlic clove, finely sliced
A splash of white wine
4-5 new potatoes or 1 regular size potato per person, boiled and still warm, to serve
Cooked ham, shredded or sliced, to serve
Cornichons, pickles or pickled onions
Fresh cut, your choice of carrots, peppers, broccoli, cauliflower


Preparation and cooking:
Preheat the oven to 400F.


Wrap the outside of the spruce box securely in foil, making sure the foil goes up to the top of the outside of the box (you don’t want to lose a drop) , ensure to leave the top exposed.


Set the wrapped cheese on a baking sheet.


Make slits in the cheese with a knife and stick the thyme and garlic slices into the holes.


Season with ample quantity of pepper


Pour a splash of wine over the cheese and into your glass


Place in the oven for 8–10 minutes until completely soft.


Serve while still hot


Spoon the cheese over the warm potatoes, ham, cornichons and veggies.
