Zucchini with Bra Duro

Zucchini with Bra Duro
~Tis the season when Zucchini is in abundance so think about having this as an appetizer, or with your main course. Perfect for your Thanksgiving dinner.


Ingredients:
100g Bra Duro finely grated (New to The Cheese Man and available at the shop)
2 large sweet onions, sliced and chopped
2 cloves garlic chopped (or the equivalent of crushed garlic in a jar. I’m all about easy so I use the garlic in a jar)
3 Tbsp. Olive oil plus a little extra for drizzling
600g Zucchini (a lb. and ½ = 2-3 depending on size)
4 slices Italian Pancetta
¼ cup Crushed Ace Olive Oil and Sea Salt crackers (new to the shop)
1 sprig rosemary or thyme plucked


Preparation and Cooking:
Preheat oven to 340 F


Add olive oil to a pan and sauté onions and garlic until soft then place in a large casserole dish


Cut the tops and bottoms off of each zucchini


Slice lengthwise (½ to ¼ inch thick) and place them over the onions and garlic


Layer the Pancetta over the zucchini


Sprinkle the cracker crumbs, rosemary and grated Bra over the zucchini and Pancetta


Drizzle a little olive oil over the dish and bake for about 25 minutes


Serve warm and enjoy!
