Why does my cheese weep?


Have you ever noticed that when you cut into a piece of cheese that there can often be moisture in the eyes or holes in the cheese? Weeping is a descriptive term referring to cheeses whose eyes glisten with bits of moisture. This is caused by the release of moisture by proteins as they are broken down during ripening. Weeping often indicates that a cheese has achieved peak ripeness and will be at its full flavor. I can only speak for myself, but a great cheese will often bring a tear to my eye!
