What is the Fat Content in cheese?

This term refers to the fat content in the dry matter of the cheese. In a supermarket it is usually indicated on the cheeseā€™s packaging. In the cheese shop you will have to ask for my best guess! It can be as low as 4% (not much taste and not a great texture) and as high as 75%. Ask me about my low fat selections that are full of flavor! The terms butterfat and milkfat are used interchangeably.
