I’m sure this is a burning question that all of you have had at some point in your life!


The answer is quite simple Geotrichum candidum is a fungus or mould. This mould is not a friend to certain fruits and vegetable where it can cause sour rot! It however can be a cheese’s friend. It is widely used in the production of bloomy rind cheeses such as Brie and Camembert. It is also found on certain goat cheeses. This particular mould, when formed, creates a brain-like pattern on the cheese surface. My Camembert Le Rustique is a perfect example of the patterning effect!
