What is American Cheese?


I have recently had a number of customers ask: “I have a recipe that calls for American Cheese”, or “while in the States I buy American Cheese” …”Can you tell me what exactly is American Cheese?”


This is a seemingly easy question but the answer is a bit convoluted!


American Cheese is a descriptive term used to identify a group of American-type cheeses not a specific cheese. The types of cheese included in this group are Cheddar, Colby, granular or stirred-curd, and washed or soaked-curd cheeses. Monterey Jack is also included in this group. I usually recommend cheddar as the recipe substitute unless of course it is a Mexican food recipe, then I suggest Monterey Jack. The bottom line when making a recipe choice is to look at the recipe, consider your favourite cheese choices and then select the cheese that you think will work best. In my opinion there is no right or wrong answer!
