Weissbier Roasted Tomato Ficelle Crostini

Serves 4


Ingredients:
24-½ inch Ficelle Baguette slices. (pick this baguette up at the shop when buying your cheese!)
12 Cherry Tomatoes cut in half or 1 large beefsteak tomato cut into slices and quartered.
12 fresh basil leaves.
Olive oil to drizzle.
Salt and freshly ground pepper.
400 grams Weissbier Cheese, sliced thin with “The Cheese Man Cheese Slicer”, enough to cover each piece of toast. (both the cheese and slicer are available at the shop!)


Preparation and Cooking:
Preheat oven to 375°F


Place baguette slices on a baking sheet.


Place in oven and broil (toast) one side until they begin to harden, not burn.


Remove from oven and turn pieces over.


Lightly drizzle the baguette slices with olive oil.


Sprinkle with salt and freshly ground pepper.


Toast in oven for approximately 4-5 minutes (until they begin to harden, not burn).


Take toast out of the oven and cover with the cheese slices.


Add sliced tomatoes, and return to the oven broiling for 2-3 minutes.


Top with fresh basil and serve immediately.




Pair:
With your favourite beer or white wine.
