White Fox Frittata
White Fox Frittata
Ingredients:
- 2 tbsp butter
- 100 grams of shaped pasta (macaroni,
penne, farfalle)
- 1 small bunch green onions chopped
- 100 grams (2/3rd cup) chopped and
drained red peppers from a jar
- 6 eggs
- 4 tbsp milk
- 1 tsp chopped herbs (thyme, parsley or
chives)
- 200 grams grated White Fox cheese
- Fresh ground black pepper to taste
Preparation
and Cooking:
- Cook pasta 8-10 minutes until just
tender, rinse and drain
- Melt butter in a large ovenproof
non-stick pan
- Saute green onions 3-4 minutes
- Add pasta and peppers
- Stir thoroughly
- Preheat your oven broiler
- In a bowl beat eggs, milk and herbs.
- Add to non-stick pan
- Sprinkle grated white fox on top and
cook on low until set.
- Brown the surface in the oven. Watch
closely as you just want it browned not burnt!
- Cool and slice into wedges
- Serve hot, warm or cold with your
favourite salad
