White Fox Frittata

White Fox Frittata

Ingredients:

  • 2 tbsp butter
  • 100 grams of shaped pasta (macaroni, penne, farfalle)    
  • 1 small bunch green onions chopped
  • 100 grams (2/3rd cup) chopped and drained red peppers from a jar
  • 6 eggs
  • 4 tbsp milk
  • 1 tsp chopped herbs (thyme, parsley or chives)
  • 200 grams grated White Fox cheese
  • Fresh ground black pepper to taste

Preparation and Cooking:

  • Cook pasta 8-10 minutes until just tender, rinse and drain
  • Melt butter in a large ovenproof non-stick pan
  • Saute green onions 3-4 minutes
  • Add pasta and peppers
  • Stir thoroughly
  • Preheat your oven broiler
  • In a bowl beat eggs, milk and herbs.
  • Add to non-stick pan
  • Sprinkle grated white fox on top and cook on low until set.
  • Brown the surface in the oven. Watch closely as you just want it browned not burnt!
  • Cool and slice into wedges
  • Serve hot, warm or cold with your favourite salad
