Do not cut off the rind: you’ll get a crisp, flavoursome crust if you just scrape some of it away.
When preparing Raclette in pans, make sure you don’t overcook it, otherwise the albumin gets grainy and the fat separates.

What to Drink with Raclette
Wine:
A light-bodied dry white wine or fruity light red wine. Try a white Swiss wine, Sauvignon Blanc, Pinot Noir or Rosé.
Beer:
Any cool light beer will do too.
Nonalcoholic:
True connoisseurs recommend tea because it stimulates the digestion. But you can also try sparkling water with fresh squeezed lemon or iced green tea.


What to eat before and after a Raclette dinner:
I recommend not too much and nothing too heavy as the Raclette, in itself, is a big meal. However, you can serve seasonal salad as a starter and finish off with a fruit sorbet, fresh fruit or a fruit salad for dessert.
