Spicey Goat Cheese Crepes

Spicey Goat Cheese Crepes:


Apdaped from an “All you need is Cheese” recipe
Serves 4-6


Ingredients:
1 Tbsp butter
1 sweet onion chopped
2 garlic cloves or crushed garlic equivalent
1lb boneless chicken breasts cut into strips
1 ¼ cups tomato sauce
½ cup salsa
1/3 cup whipping cream
Salt and pepper to taste
8 large crepes (for the adventuresome you can make them yourself or for people like me you can buy them at your local supermarket)
1 bunch trimmed asparagus (to trim simply break off the ends of the stalks, they will have a natural breaking point so each piece will be slightly different in length)
200 grams of grated Red Chili Goat Gouda (substitute your favourite cheese if you are not too adventuresome)
¼ cup coarsely chopped fresh cilantro


Preparation and cooking:


Preheat oven to 400 °F


Place 1 Tbsp butter in large deep skillet and place over medium heat
Brown onion and garlic for two minutes


Add chicken strips and cook until brown


Add tomato sauce, salsa and whipping cream


Season with salt and pepper


Simmer for 7-10 minutes


In a pot, boil asparagus for 2 minutes and drain
Remove chicken from sauce.


Spread crepes out on counter top, divide chicken and asparagus equally between crepes


Roll up crepes and place in large lasagna dish


Pour the sauce over crepes and cover with Goat Gouda


Brown in the oven


When done garnish with cilantro and serve
