These are cheeses with no rind, which are intended to be eaten fresh. They are very perishable! Some of the cheese choices that fit in this category are: Fresh Goat cheese, Cream Cheese, Mozzarella and Feta.

Depending on the cheese selected the flavour and aroma can vary from sweet, simple and elegant to crumbly, nutty, fruity, salty and citrusy.
