Roquefort Steak Sauce
~ Complements of Gayle and Gordon Howland
Ingredients:
1/3 cup shallots
1/4 cup white wine (you can substitute brandy if you like)
40-50 grams Roquefort cheese, crumbled (I can suggest substitutes for those that prefer a milder blue flavour)
1/4 cold water
1/4 cup chopped chives, parsley or both
Preparation
Combine shallots and ΒΌ cup water in a skillet
Boil until no liquid remains
Reduce heat to medium, pour in wine
Boil until reduced to approx 2 tsp
Slowly add cheese until all is melted and sauce is smooth
Add chives and/or parsley
Pour over your cooled steak and enjoy!
This sauce can be made in advance and warmed in the microwave.

Gayle and Howard suggest a nice LARGE glass of Bordeaux of course!
