Roasted Red Pepper Soup with Cold Smoked Cheddar
Ingredients:
• 1 Tbsp. olive oil
• 2 tablespoons butter
• 1 sweet onion finely chopped
• 2 carrots peeled and chopped into small chunks
• 1 jar roasted red peppers drained and finely chopped
• 4 cloves minced garlic
• 14 oz. reduced chicken broth (can be made from scratch or store bought)
• 2 tsp. dried & chopped basil
• ½ tsp. dried & chopped thyme
• salt and pepper to taste
• 100 grams shredded Cold Smoked Cheddar
• crumbled bacon bits
Preparation and Cooking:
Heat olive oil on medium heat in a smallish 4 quart soup pot
Add onions and cook until tender (approx 3-5 minutes)
Add carrots, roasted peppers, garlic, chicken broth and seasonings.
Bring to a boil: reduce heat and simmer uncovered for approx ½ hour
Remove contents from pot and puree in a blender
Return contents to pot and add the Cold Smoked Cheddar
Heat on low and stir until cheese has melted
Ladle into bowls, sprinkle bacon bits on top and serve
