PRIMA DONNA AND BACON SCONES
~ Adapted from a Fiona Beckett recipe
Serves 4 so you may want to double or triple this recipe!
(This recipe has cheese and bacon, what’s not to love!!)
Ingredients:
2 slices of bacon finely chopped
1 ½ cups flour
3 ½ teaspoons of baking powder
¾ tsp salt
A pinch of cayenne pepper
100 grams grated Prima Donna cheese (you can substitute with parmesan)
3 tbsp chilled butter, cubed
1 egg
Milk
Cream cheese
Preparation and Cooking:
Preheat your oven to 425°F.
Fry bacon on medium heat until crispy.
Break egg into a measuring cup and add milk to 2/3 cup mark and mix.
In a large bowl mix the flour, baking powder, salt, and pepper.
Rub in the butter with your fingers, do not over mix you want it as light and fluffy as possible.
Stir in the Prima Donna and bacon.
Make a well in this mixture, and pour in most of the egg and milk.
Add just enough of the mixture to create a dough.
Put the dough onto a lightly floured surface and press into a 1″ thickness
Cut into 1 ½” x 1 ½” squares
Brush the squares lightly with the remaining egg/milk mixture
Put on a baking sheet covered with parchment paper
Bake for approximately 15 minutes until lightly browned
Put on a wire rack to cool completely.
Split, and serve with cream cheese, and/or the filling of your choice
