Onion Tart With Montgomery Cheddar

ONION TART WITH MONTGOMERY CHEDDAR
~ Adapted from a Fran Warde recipe


Serves 6


Ingredients:
1½ cups flour
½ cup butter
1medium-sized
4-5 medium sized onions
300 grams Montgomery’s Cheddar
4 eggs
3 tbsp milk
Sea salt to taste (if you have it, I use very little salt)
Freshly ground black pepper to taste (I always use pepper)


Preparation and Cooking:
Preheat your oven to 400°F.


Place the flour in a bowl, then cut in the butter.


Rub between your fingers until it resembles breadcrumbs.


Add the beaten egg and mix together the ingredients (a little extra cold water may be needed).


When it forms a dough ball, cover, and chill in the fridge for 20 minutes.


Butter a 9″x13″ pan.


Roll out the chilled pastry so that it fits into the pan.


Using a mandolin or sharp knife, slice the onions finely and place evenly on uncooked crust.


Grate the cheese into the onions and add the seasoning.


Whisk the 4 eggs and milk until blended and carefully pour over the onion & cheddar mix.


Bake for 25 minutes.


Reduce heat to 325°F and cook for a further 20 minutes.


Leave to cool for 5 minutes, then serve.


Great hot or cold!
