Mountain Omelette
Ingredients:
• 2 large eggs
• 1 tbsp milk
• 1/4 tsp each salt (I don’t use salt) and freshly ground black pepper
• 1 tbsp butter cut in small bits
• 80g Jura Montagne, shredded
• 1 tsp (5 mL) each chopped fresh chives and parsley
Preparation and Cooking:
Lightly beat eggs in a small bowl
Beat in milk, salt, pepper and half of the butter
Heat a 8 to 10-inch nonstick frying pan over medium heat
Add remaining butter; let melt partially
Pour in egg mixture and stir with fork or spatula for 20 to 30 seconds or until eggs just start to look set then stop stirring
Cook for 1 to 2 minutes, tilting pan and gently lifting edges with spatula to allow uncooked egg to flow underneath.
Remove pan from heat. Sprinkle evenly with cheese, chives and parsley
Use spatula to fold one-third of omelette over the filling
Tilt frying pan at an angle with the folded side toward a plate. Fold other third of omelette over the filling and gently slide omelette onto plate
