Marinated Goat Cheese with Chili and Tarragon

Ingredients:
500g firm goat cheese (Goat gouda and several other choices are available at the shop)
1 ½ cups olive oil (not extra virgin just regular)
2 tbsp red wine vinegar
3 tbsp finely chopped tarragon leaves
3 small fresh red chillies (seeded and finely chopped)
6 cloves garlic crushed (there won’t be a vampire within 20 miles!!)
½ teaspoon cracked black pepper


Preparation and cooking:
Cut cheese into 3 cm cubes (a little over an inch)


Combine cheese with the ingredients listed, into a bowl


Cover and refrigerate overnight (ideally up to 3 days but I don’t have the patience!)


To serve bring to room temperature and serve as is, with crackers or with a tooth pick


Pair:
With a cold beer or crisp white wine
