Lincolnshire Poacher Scones

Ingredients:

  • 700 grams (3 ½ cups) all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 tsp Salt
  • 5 ounces (¾ cup) unsalted butter (softened)
  • 3 Eggs (slightly beaten)
  • 5 ounces (¾ cup) milk
  • 210 grams (1 cup) grated Lincolnshire Poacher Cheese
  • 1 egg yolk (for egg-wash)

Preparation and Cooking:

  • Pre-heat oven to 350°F.
  • In a bowl mix flour, baking powder and salt, then add butter and rub together.
  • Then add 150 grams (¾ cup) of the grated cheese followed by the eggs.
  • Work the mixture together by hand.
  • Use a little flour to stop the dough sticking to the countertop
  • Pour the mixture out of the bowl onto your countertop.
  • Gradually add the milk into the mixture as it is worked together.
  • Gently roll out the dough to about 1″ – 1 1/2″ inch thick, then using a pastry cutter (2″ diameter).
  • Cut out, arrange on a greased baking tray.
  • Brush with egg-wash.
  • Sprinkle the remainder of the cheese on top.
  • Bake for 10-12 minutes.
