Landana-style Vegetarian Spaghetti

Landana-style Vegetarian Spaghetti
Serves 2 People


Ingredients:
1 cup grated Landana MATURED
3/4 cup cauliflower flowerets
3/4 cup carrots peeled and cut into thin strips
1/2 cup zucchini cut into thin strips
1/2 cup spinach leaves large stems removed
1/2 cup (thawed)frozen peas
Salt
1 tbsp oil
2 onions (1/3 cup) diced
1/3 cup butter
2 cups whipping cream
1 cup spaghetti
nutmeg


Preparation Method:
Cook spaghetti in salted water following the instructions on the package (I like mine dente)


Drain spaghetti, let dry fully and place in a pre-warmed bowl.


Blanche the vegetables


Slow cook onions until translucent in 3 tbsp butter, add cream and cook over high heat, stirring constantly, until slightly thickened and creamy.


Add a little oil and cook with:


Cauliflower for 5 min


Carrots 3 min


Zucchini, spinach and peas for 1 minute each.


Stir Landana MATURED into the cream sauce and let it melt


Add remaining butter and turn into the noodle dish.


Season sauce with nutmeg and salt


Plate and enjoy


Pair:
With any of your favourite red or white wines, it’s great with both!
