Landana,
Blackberry, and Bacon Grilled Cheese
(adapted from
an Erica Clark recipe)
Ingredients:
- 6 slices of
bacon cut in half (available at the shop)
- 4 ½ inch
slices of crusty or multigrain bread
- 2 Tbsp
blackberry preserves (substitute freely with your favourite preserve or fruit
tapenade)
- 200 grams
grated Landana Mature Gouda
Preparation
and Cooking:
- Fry the bacon
in a saucepan over medium heat until crisp
- Wrap the
cooked bacon in paper towels to drain
- Save the
drippings and wipe out the saucepan
- Cover two
slices of the bread with the preserves
- Place bacon
pieces and grated cheese on top of the preserves
- Place the
remaining pieces of bread to complete the sandwich
- Coat the
saucepan with 1-2 Tbsp of the drippings and set over medium heat
- Arrange the sandwiches in the saucepan and cook until bottom is golden
brown
- Flip and add another 1-2 Tbsp of the drippings to the pan
- Cook until the cheese is melted and the bread is golden brown
- Plate and serve with your favourite grilled cheese condiments
