Ham & Cheddar Breakfast Loaf

Loaf Ingredients:
2 ½ cups flour
½ cup shredded old cheddar (the older the better is my opinion)
3 tbsp finely chopped red pepper
2 tbsp chopped fresh parsley
2 tbsp sugar
1 tbsp baking powder
¼ tsp salt
¾ cup butter cubed
¾ cup milk
Filling Ingredients:
3 tbsp Dijon mustard
½ cup finely chopped ham
½ cup shredded old cheddar (once again older is better … just say’n)
½ tsp pepper
1 tbsp melted butter
Preparation and cooking:
Loaf:
Preheat oven to 400 F
Combine flour, cheddar, red pepper, parsley, sugar, baking powder and salt in a large bowl
Mix, using a pastry blender (whisk) or fingers, until mixture resembles coarse crumbs
Add milk all at once
Stir with a fork to make a soft sticky dough
Knead dough on a lightly floured surface (approximately ten times)
Pat dough into a ½ inch thick rectangle (13×10”)
Loaf/Filling instructions:
Spread mustard over dough
Sprinkle with ham, cheddar, and pepper
Roll dough up like a jelly roll and pinch seam
Place in greased and parchment lined 9×5 inch loaf pan
Brush loaf with butter
Bake for approximately 50 minutes until golden
