Ham and Cheese Scones
Ingredients:
4 c all-purpose flour
2 Tbsp sugar
2 Tbsp baking powder
1 tsp salt
1 c cold unsalted butter
1 ½ c buttermilk
2 c shredded aged cheese (I used aged sheep gouda)
2/3 diced ham
3 green onions chopped fine
Preparation:
Preheat oven to 425
In a large bowl combine the first 4 ingredients.
Cut the butter into smaller chunks and add it to the dry ingredients. Using 2 knives, a pastry blender or your fingers work the butter in until it resembles coarse crumbs.
In another bowl, mix together the buttermilk, shredded cheese, ham and green onions. Pour this into the butter mixture and using your fingers mix until a soft dough forms. Do not overmix.
On a lightly floured surface, dump the dough out and knead 3-4 times, until the dough holds together. Form the dough into 2 12 x 4 inch rectangles (about an inch or so thick). Cut the rectangles into the desired shapes.
At this point you can place the pieces into the freezer to bake at a later date or you can bake them immediately.
Bake them for about 18 – 20 mins until they are lightly browned. If you are taking them out of the freezer, bake them from frozen at 375 for about 20 mins.
