Grilled Pork, Apricot and Feta Cutlets
Ingredients
6 – 1” thick pork cutlets
1 small container cow or goat Feta, crumbled (available at the shop)
Cheese substitute: try 250 grams of Gruyere, Brie or an Aged Gouda
¼ cup chopped onion
2 cloves garlic, chopped
⅓ cup (80 ml) Apricot or Jalapeno Apricot jam (for those who like a little spice) Both Jams are available at the shop
1 red pepper sliced
½ cup (125 ml) chicken or beef broth
3 tablespoons (45 ml) Apricot or Jalapeno Apricot jam
3 sprigs fresh thyme
⅓ cup fresh parsley, chopped
Preparation and Cooking:
Preheat grill &/or BBQ to medium heat.
Slice cutlets lengthways, halfway through their thickness without cutting all the way through and set aside
In a bowl crumble the feta cheese
Mix the Feta with the onion, garlic and Apricot jam.
Season generously with pepper and set aside
In another bowl combine broth, red pepper slices, 3 Tbsp of jam, thyme and parsely
Stuff cutlets with Feta and apricot mixture.
Close cutlets and hold in place with toothpicks.
Grill the cutlets 2 minutes on each side.
Transfer onto a sheet of parchment paper or aluminum foil
Add the mixture of broth, jam and herbs
Wrap up the parchment or aluminum foil to seal in the moisture
Place on the grill and continue cooking for 10–12 minutes.
Serve with your favourite veggies or salad!
