Grilled Gruyere Quesadillas
~ Adapted from a recipe I found online
Ingredients
100 – 200 grams shredded Gruyere Cheese
(also try this with Goat with Red Chilies, Jalapeno Havarti, Aged Cheddar, Danish Fontina or any combination of cheese that you have in your fridge)
4 small tortillas
(plain, sun dried tomato, Jalapeno or whole wheat, you decide)
1 ½ cups salsa
¼ cup chopped fresh cilantro
2 green onions sliced
Small tub of sour cream
Roquamole (see featured recipe but for the less adventuresome substitute regular guacamole)
Preparation and cooking:
Heat BBQ to medium heat
Grate cheese and place a quarter of the cheese on 1/2 of each of the tortillas leaving one side bare
Top cheese with 3/4 cup of the salsa and set remaining salsa aside
Sprinkle green onion, and cilantro over top of salsa
Fold tortilla in 1/2 covering topping and pinch edges to secure
Place tortillas on grill for approximately 1-2 minutes per side until tortillas are lightly browned and cheese is melted
When done place on plate and top with:
Sour cream and Roquamole (see featured recipe, for the less adventuresome, substitute regular guacamole)
