Fleur D’Aunis, Sweet Potato and Jambon Tart

Ingredients:

  • 400 grams Fleur D’Aunis cheese
  • 1 packet of puff pastry
  • 1 sweet potato
  • 1/2 red onion – thinly sliced
  • 4 – 6 slices of Jambon cured dried ham
  • Thyme
  • olive oil
  • freshly ground black pepper

Preparation and Cooking:

  • Preheat oven to 350°F
  • Thinly slice the sweet potato place in a bowl
  • Dribble olive oil over the sweet potatoes and season with pepper and thyme. Mix until evenly coated
  • Place on a cookie sheet or roasting pan and roast in the oven until soft. About 20 minutes until soft.
  • Set aside
  • Roll out the puff pastry and put onto baking pan/sheet.
  • Slightly roll the edges
  • Prick the pastry with a fork and bake for about 5 minutes.
  • On the pastry, layer the onion, Jambon and cheese between the sweet potato slices.
  • Lightly coat with olive oil and sprinkle with fresh thyme leaves.
  • Bake in the oven for 25 minutes at 350°
