Creamy/Spicy Balsamic Blue Cheese Bites
~ A simple appetizer that your guests will think you spent hours creating! A Creamy whipped blue cheese spread topping a toasted baguette with caramelized onions and asparagus and a savory balsamic reduction.
Serves: 10-12
Ingredients
120 grams crumbled Danish Blue cheese
1 tub Organic Cream Cheese
1 Tbsp white vinegar
2 Tbsp extra virgin olive oil
A pinch black pepper
~ 1/4 cup 2% or whole milk
3/4 cup Fig and Fire Balsamic Vinegar Reduction (available at the shop)
8-10 sprigs asparagus
1 jar Caramelized Onion Confit (available at the shop)
12-14 slices baguette
Preparation and Cooking:
Position oven rack on second from top position
Preheat on low broil
Slice baguette into 1/2 inch pieces (1-2 slices per person) and arrange on baking sheet and set aside.
Place blue cheese, cream cheese, vinegar, olive oil, and pepper in a bowl or food processor and mix until consistency is thick like a frosting
Sauté asparagus in a large saucepan over medium heat until tender
Season with salt and black pepper and set aside
Toast baguette in the oven until light golden brown
Then remove from the oven. Spread the whipped blue cheese mixture on top of the baguette pieces.
Top with sautéed asparagus and a spoonful of the caramelized onion
Drizzle with balsamic reduction and serve immediately!
