Country-Style Vegetarian Spaghetti

Country-Style Vegetarian Spaghetti


This recipe is adapted from a recipe shared by the cheese manufacturer
NOTE: this recipe serves 2 Persons so increase your proportions as required!


Ingredients:
1/4 cup Landana MATURED
3/4 cup cauliflower flowerets
3/4 cup carrots
1/2 cup zucchini
1/2 cup spinach leaves
1/2 cup frozen peas
1 tbsp oil
1 onion diced(1/3 cup)
1/3 cup butter
2 cups whipping cream
1 cup spaghetti
¼ to ½ tsp nutmeg


Preparation and cooking:
Thaw the peas


Make small flowerets with the cauliflower


Cut carrots and zucchini into thin strips


Remove large stems from spinach leaves


Cook diced onion in 3 tbsp butter until translucent


Add cream and cook over high heat, stirring constantly, until creamy.


Cook spaghetti in salted water as you would normally do


Add a little oil and cook with
• cauliflower for 5 min
• carrots 3 min
• zucchini spinach and peas 1 minute each


Drain spaghetti and vegetables, let dry fully and place in a pre-warmed bowl


Add remaining butter and turn into serving dish


Stir Landana Mature into the cooked cream sauce and let it melt


Season sauce with nutmeg and serve with the spaghetti


Pair:
With a rose or medium bodied red.
