Comox Baked Brie with a Fig Crown


~Adapted from a Jennifer Low recipe found in November 2011 Canadian House and Home magazine
Serves 4-6


Ingredients:
4-5 dried figs (don’t have figs use our Peppery Mission Fig Cheese Pleaser)
1 or two rounds Comox Brie
2 tsp mango chutney
1 Tbsp chopped dried fruit (I suggest blueberries, cranberries or apricots)
½ cup pecan halves
2 tsp honey
2 tsp port wine
1 tsp balsamic vinegar
Fresh cracked pepper
Sliced baguette


Preparation and cooking:
Preheat oven to 375 F
Place figs in ¾’s of a cup of very warm water to plump
Slice off top of brie rind (optional) I have a great slicer that makes this step easy so ask me about it next time in the shop!
Slice brie round in half horizontally
Set bottom half in a heat proof dish
Spread mango chutney over bottom half
Sprinkle with chopped dried fruit
Place top of cheese over chutney and dried fruit
Drain figs, pat dry and thinly slice.
Alternate fig and pecan pieces around the top of the cheese
Don’t have figs use a spoonful of our Peppery Mission Fig Cheese Pleaser!
Mix honey, port, and vinegar and spoon over figs and pecans
Sprinkle with pepper
Bake10 minutes
Then broil briefly to brown pecans
Serve while hot, with baguette slices
