Cheesy Seafood Casserole

Cheesy Seafood Casserole
~ Adapted from a recipe given to me by a customer. Serves 6.


Ingredients:
½ lb scallops, if large cut in half
½ lb boneless white fish, cut in bite sized pieces (sole, snapper, halibut or ling cod)
½ lb large shrimp or prawns, shell and de-vein if necessary
½ large onion, finely chopped
½ stalk of celery, finely chopped
1 sweet red or green pepper, finely chopped
2 tbsp oil (olive or vegetable)
½ cup butter
1/3 cup flour
3/4 cup light cream (i.e. ½ & half)
¾ cup milk
salt and pepper to taste
¾ cup dry white wine
1 cup grated swiss cheese
½ cup fine cracker crumbs
Curry powder to taste (optional)


Preparation
Set seafood aside.


Heat oil in saucepan over medium heat.


Heat and sauté vegetables until tender (about five minutes).


Remove vegetables from pan with slotted spoon and set aside.


Melt butter in saucepan.


Stir in flour and cook stirring for about one minute.


Continue stirring as you add the cream, milk, salt and pepper to taste.


Cook, stirring constantly until sauce boils and thickens. (about three to five minutes).


Continue to stir while you blend in wine.


Remove from heat and stir in sautéed vegetables, seafood and half of the grated cheese.


Pour into greased 13×19” baking pan or into individual, shell serving dishes.


Mix remainder of the cheese with the cracker crumbs and sprinkle on top.


Bake uncovered in preheated oven at 350º F for 20 to 25 minutes or until sauce is bubbly.


Serve and enjoy!

Serve with a crisp dry glass of Reisling white wine or of course with any of your favourite whites!!
