Buttermilk Blue Cheese Dip

Buttermilk Blue Cheese Dip
~ A great appetizer for your long weekend festivities! Serves 4


Ingredients
5 Tbsp. finely chopped red onions
¼ cup white wine vinegar
¼ cup water
Pinch of sea salt
½ cup sour cream
2 Tbsp. chopped fresh chives
½ cup Buttermilk Blue cheese (new and available at the shop)
Freshly ground black pepper


Preparation and Cooking:
Pickled onion:
Put chopped onions in a small casserole dish


In a pot bring vinegar, salt and water to a boil


Pour over onions and stir


Cover and let sit in fridge for 1-2 hours


Dip:
Whisk sour cream and chives in a bowl until smooth


Stir in Buttermilk Blue cheese


Drain pickled onions and stir into dip


Season with salt and pepper


Refrigerate, can be made 3 days in advance
