Blue Cheese Burgers

Blue Cheese Burgers
~ (Makes 4 ½ lb burgers)


Ingredients:
1 pound / 500g ground beef (for a juicy burger don’t go too lean!)
1 Tbsp Dijon mustard
2 cloves minced garlic (when I want to be quick I use the already minced that comes in a jar)
2 green onions, chopped
90-100g crumbled blue cheese

  • Danish Crumbly Blue if you want it sharp
  • Stilton if you want a full rich flavour
  • Benidictin Blue for something in between

1 egg
1 Tbsp water
Salt and freshly ground black pepper
 


Preparation and cooking:
Put all of the ingredients into a large bowl – ground beef, mustard, garlic, onions, blue cheese, water, egg, salt and pepper.


Fold the ingredients together until just mixed. Do not over-mix.


Shape into patties, about ½ to ¾ inch thick.  Make them large so they are still substantial in size when placed on your bun.


Place on waxed paper and keep in the fridge until you are ready to start cooking.


You are probably thinking why don’t I just put a mound of cheese between two hamburger patties and pinch the sides.


This will work assuming you have completely sealed the edges of the burgers.


If not, all the melted cheese will leak out when you cook the burgers and you know how I hate to waste cheese!


When ready to start season the outside of the burger with salt and pepoer


Cook burger over medium heat.


To prep the grill to avoid sticking you can spray a vegetable spray (before you start to heat the grill) or once the grill is heated wipe the grill with a paper towel that has been dipped in cooking oil (I like olive oil).


Grill about 5 minutes a side


Do not press down on burgers while cooking or the melted cheese will leak out again wasting your wonderful Cheese Man cheese!


Once cooked top with your favorite condiments.

For a bit of spice add 1/4 teaspoon hot pepper sauce or some red pepper flakes to your burger mixture.
