Benedictin Blue Fritters

Benedictin Blue Fritters
~This recipe was given to me by my customer Jane.
Makes 16 Fritters



Ingredients:
1 ripe pear peeled cored and grated
1 small red onion chopped
2 Tbsp chopped fresh chives
2 egg whites
60 grams Benedictin Blue cheese
¼ cup rice flour
Vegetable oil for frying


Preparation and Cooking:
Place pear, onion, egg whites, Benedictin Blue cheese and chives in a medium bowl


Add the flour, baking powder, salt and pepper and stir to combine


Heat about ½” oil in a large nonstick frying pan on medium heat


Working in batches, drop tablespoons full of the mixture into the hot oil


Fry 1-2 minutes per side until the fritters are golden


Add more oil as needed


Remove Fritters from pan and drain on paper towels


Arrange on a serving plate!
