BBQ’d Scalloped Potatoes
~ Adapted from a recipe found online.
Ingredients:
2 cups thinly sliced potatoes
1 cup thinly sliced carrots
1 cup onion slices (optional)
½ cup water
50g Parmesan Cheese
150 grams shredded Gruyere Cheese
1/4 cup Mayonnaise
2 tbsp chopped fresh parsley
Preparation
Put potatoes, carrots and onions in a microwaveable bowl.
Add water and cover with waxed paper
Microwave on high for 5-7 minutes until potatoes are crisp tender
Drain completely
Alternatively you can parboil the carrots and potatoes in a sauce pan
Put potato, carrot and onions onto a large sheet of heavy duty aluminum foil that has been sprayed with cooking spray
Put mayonnaise and cheese on top.
Fold foil to make a packet (I would suggest double wrapping)
Preheat BBQ on medium heat
Grill on low heat for 15-20 minutes until cheese is melted and veggies are tender (don’t overcook and make sure BBQ is not so hot as to burn the cheese)
When done open packet and sprinkle on fresh parsley and parmesan
Serve from foil packet and enjoy!
