BBQ’d Grilled Cheese Sandwiches
~ Adapted from a recipe I found online
Preparation
100 – 200 grams per person of Gruyere or Sharp Cheddar Cheese
(also try this with Goat with Red Chilies, Jalapeno Havarti, Danish Fontina or any combination of cheese that you have in your fridge)
2 pieces of thick cut bread (white or grain, you decide)
1-2 slices of cooked bacon per sandwich
1-2 thin slices of tomato per sandwich (I like two!)
2-3 thin slices of avocado per sandwich
Butter
Mayonnaise
2 tbsp salsa
Preparation and cooking:
Mix Salsa and Mayonnaise in a small bowl to be used as a dip for the sandwiches
Heat BBQ to medium-low heat
Butter one side of each piece of bread
Make a sandwich with the butter side out filling with cheese, bacon, tomato and avocados
Grill with lid closed 4-6 minutes turning once
It is done when each side has nice grill markings and the cheese is melted.
Keep a close eye on it as you don’t want to burn the toast!
Enjoy with a fresh summer salad!
