BBQ’d Baked Tomatoes
Adapted from a recipe found online.
Serves Four
Ingredients:
4 large tomatoes cut crosswise in half
1/8th cup Balsamic Vinegar Reduction (available at the shop)
1/8th cup olive oil
80 grams grated Parmesan
1 Tbsp chopped basil (optional or use Italian seasoning)
Preparation and cooking:
Heat BBQ to medium heat
Mix olive oil and balsamic vinegar reduction in a small bowl or glass
Place tomatoes, cut side up, on small baking pan covered in foil wrap
Drizzle Balsamic mixture on tomatoes
Sprinkle with basil
Sprinkle with cheese
Cook on BBQ with lid closed for 10-15 minutes or until tomatoes are softened and cheese is lightly browned. Tomatoes should be warm throughout!
Transfer to plates and serve with your favourite entre.
