Bacon Salad with Tête de Moine

Ingredients:

  • 4 bacon slices per serving
  • Mixed greens
  • Olive oil
  • Blanched pine nuts
  • Balsamic vinegar
  • Pepper
  • Tête de Moine cheese florets or shavings

Preparation and Cooking:

  • Fry bacon until crispy. Once cooled, chop/break into smaller pieces.
  • Toast the pine nuts on a baking sheet until golden yellow, watch carefully to make sure they don’t burn.
  • Place crispy bacon on individual plates.
  • Cover with mixed greens.
  • Drizzle with oil and balsamic.
  • Place cheese florets or shaving on top of the greens.
  • Season with pepper to taste.
