Bacon Jam Cheese Appetizer
Cheryl, a golfing buddy, swears by this recipe and in her words “a lot of work for a small yield, but well worth it!”
You may want to double the recipe! Found on “The Endless Meal” website!
Ingredients:
- 1 lb. thick cut bacon
- 2 extra large sweet onions, quartered
and thickly sliced
- ½ cup brown sugar
- ⅓ cup strong brewed
coffee
- ½ cup water
- 1 tablespoon balsamic vinegar
Preparation
and Cooking:
- Cut the bacon into ½ inch slices and add to a large
frying pan
- Cover and simmer over medium heat for 10 minutes,
stirring frequently until bacon is cooked, but is chewy not crispy
- Remove the bacon from the pan and set aside to cool
- Pour all but 1 teaspoon of the bacon
fat into a holding dish to be later discarded or kept
- Add the onions to the pan with the tsp o bacon grease and
cook for 8-10 minutes
- Reduce heat to low and stir in the
sugar
- Continue cooking onions until they have
caramelized, this should take about 20 minutes, stir occasionally
- Add coffee, 1/2 cup water and reserved
bacon
- Increase heat to medium and cook for
about 30 minutes
- Stir about every 5 minutes, until the
onions are thick and jam-like
- Remove from heat and stir in the
balsamic vinegar
Use immediately or refrigerate for up to a week.
After refrigeration:
- Bring the jam back to room temperature before serving.
- Ignore any little spots of fat, these will disappear when room temperature is achieved.
