What are Tyrosines


These are small, crunchy white crystals found in or on the surface of certain cheeses. They are a crystallization of the amino acid, tyrosine, which happens during the cheese ripening process. They’re perfectly fine to consume.


Most Turophiles (cheese lovers) like myself, consider the crunchy texture they impart to be highly desirable. I carry a number of cheeses that contain Tyrosines, but my aged goudas, parmesans and cheddars are the most notable.
