Poacher Scones
Ingredients:
- 700 grams (3 ½ cups) all-purpose flour
- 1 1/2 tsp baking powder
- 1 tsp Salt
- 5 ounces (¾ cup) unsalted butter (softened)
- 3 Eggs (slightly beaten)
- 5 ounces (¾ cup) milk
- 210 grams (1 cup) grated Lincolnshire Poacher Cheese
- 1 egg yolk (for egg-wash)
Preparation and Cooking:
- Pre-heat oven to 350°F.
- In a bowl mix
flour, baking powder and salt, then add butter and rub together.
- Then add 150
grams (¾ cup) of the grated cheese followed by the eggs.
- Work the mixture
together by hand.
- Use a little
flour to stop the dough sticking to the countertop
- Pour the mixture
out of the bowl onto your countertop.
- Gradually add the
milk into the mixture as it is worked together.
- Gently roll out
the dough to about 1″ – 1 1/2″ inch thick, then using a pastry cutter (2″
diameter).
- Cut out, arrange
on a greased baking tray.
- Brush with
egg-wash.
- Sprinkle the
remainder of the cheese on top.
- Bake for 10-12
minutes.
