Smoked Salmon, Basil, Lemon & Goat Gouda Quesadillas
(I’m not sure if this is best as an appetizer or a main course. I’ll let you be the one to decide.)
Ingredients:
• 8 x 8” flour tortillas
• 100 grams or more of cream cheese (or substitute cream cheese with more Goat Gouda)
• 8 ounces (250 grams) smoked salmon cut into 1 inch strips
• 200 grams grated (or thinly sliced) goat gouda
• ½ cup thinly sliced fresh basil or ¼ cup dried basil
• 1 lemon, zested and then quartered
• Ground black pepper to tasted
• Olive oil
Preparation and Cooking:
Preheat oven to 250°F
Place tortillas on a flat surface
Spread cream cheese on half of each shell
Layer salmon strips over cream cheese
Layer salmon with the Goat Gouda
Scatter basil over the Goat Gouda (you should have figured out the pattern by now?)
Add a little lemon zest and black pepper to each
Fold each tortilla in half and press together firmly
Coat the bottom of a non stick fry pan with olive oil
Heat oil and add 1-2 tortillas to the pan (depending on what it will hold)
Cook each side on medium to high heat, until golden brown and cheese is melted.
Transfer cooked tortillas to a baking sheet and place in the oven to keep warm
Cut each quesadilla into 1/3’s and serve with lemon slices
