Kaltbach Roast Beef Crostini Salad
Ingredients:
½ baguette
2 cloves garlic
1 tablespoon brown sugar
7 tablespoons olive oil
Sea salt and pepper to taste
6 walnuts
2 green onions
250 grams Kaltbach Emmental
4 teaspoons horseradish
1 tablespoon balsamic vinegar
1 teaspoon honey
1 apple (your favourite kind)
4 large lettuce leaves (your favourite type)
8 slices roast beef
Preparation and Cooking:
Cut the baguette diagonally into two slices.
Place on a baking sheet lined with parchment paper.
Peel and crush the garlic and mix with 2 tablespoons olive oil.
Brush the olive oil mixture onto the baguette slices and sprinkle with sea salt.
Bake until crisp at 350°F (approximately 6-8 minutes).
Melt the sugar in a frying pan with 1 teaspoon water.
Caramelize the walnuts in the pan and place on a parchment paper.
Break apart using two forks and allow to cool.
Cut the onions into thin rings and cut the cheese into thin slices.
Core the apple and cut into quarters and thinly slice.
Purée the horseradish, vinegar, honey, 3 tablespoons water and the rest of the oil (salt and pepper to taste).
Tear the lettuce into bite size pieces.
Top the baquettes with lettuce, roast beef, apple, cheese, walnut pieces and onion slices.
Drizzle with the dressing and serve
