Maturo Cheese Soup
Ingredients:
300 grams Prima Donna Maturo
2 tablespoons butter
1 sweet onion finely chopped
¼ cup flour
800 ml meat stock
100 ml white wine
1 leek (cut into thin rings) or 4 tablespoons of finely chopped celery
100 grams (3.5 oz.) crème fraîche
salt and pepper to taste
100 grams basted smoked bacon [cut into small pieces]

4 slices of white bread diced
Preparation and Cooking:
Heat the butter and glaze the finely chopped onion in it.
Add the flour and allow this to become golden brown.
Gradually add the meat stock.
Stir and bring slowly to a boil.
Add the white wine and the leek rings.
Cook on a low heat for 15 minutes, until slightly thickened.
Grate 1/3 of the Prima Donna, chop the remaining 2/3’s into small pieces.
Stir the grated cheese into the soup while adding the crème fraîche.
Salt and pepper to taste.
Fry the bacon in oil and add the diced white bread cubes.
Allow the bread to become crispy and set aside.
When ready to eat put the cheese soup into individual serving bowls.
Divide and spread the bacon-bread croutons, along with the chopped Prima
Donna Maturo evenly over the soup.
Serve immediately!
