Burrata Bits (Stracciatella) Pasta
Ingredients:
200g Linguine
200g Baby Spinach
5 slices Thick-cut Pancetta/Bacon
1 sm red chili, finely chopped (optional but I like a little spice!!)
2 cloves garlic, finely chopped
125g Stracciatella
Preparation and Cooking:
Blanche spinach until wilted, drain and chop up
Cook pasta per directions or your preference (I like it dente)
Cut bacon until crispy, set aside
Saute garlic and chilies
Add spinach.
Working quickly, stir in stracciatella (do not overwork to avoid clumps), bacon and pasta.
Plate pasta and cover with your sauce
