Burrata Bits Celery Salad
Serves 6 people
Ingredients:
2 Tbsp Lemon juice
2 tsp Dijon mustard
¼ tsp salt
3 Tbsp extra-virgin olive oil
500 grams buffalo mozzarella and/or burrata bits (A.K.A. Stracciatella, which is the cheese equivalent to the inside of an OREO cookie)
½ cup toasted walnuts, coarsely chopped (substitute the nut of your choice)
2 cups celery thinly sliced on the bias, include some leaves
Preparation and Cooking:
Whisk together the lemon juice, mustard and salt
Slowly whisk in the olive oil to make the dressing
Layer the celery and Stracciatella on a serving (or individual) plate
Sprinkle the walnuts on top
Drizzle each plate with the dressing
Serve and Enjoy!
