Cheddar-onion Butter BBQ Sauce
Have this with Corn-on-the-Cob, steak, chicken breast, pork and lamb chops.
Serves 6
Ingredients:
1 tsp butter, room temperature
¼ cup butter, softened
½ cup chopped green onion
1 cup kale, finely chopped
¼ cup pecans (or walnuts, almonds, cashews, peanuts finely chopped)
150 g 3yr Aged Cheddar, grated
Freshly ground pepper
6 corn on the cob, husks on
6 servings of the meat of your choice (filet mignon, chicken breast, pork chops and lamb chops etc. You get the idea!)
Preparation and Cooking:
Pre-preparation…. Butter and corn
In a small saucepan, melt 1 tsp of butter over medium-low heat
Sauté onion for 10 minutes or until soft
Remove from heat and let cool completely
In a bowl, mix the above onion butter & the ¼ cup of butter with kale, pecans (or nuts of your choice) and Cheddar.
Season with pepper to taste (I love pepper so I put in a fair bit!)
Shape mixture into a cylinder and cover with plastic wrap.
Refrigerate for at least 1 hour
Remove a few of the outer husks of the corn and soak corn for 60 minutes (or more) in cold water.
Just prior to eating time …
Preheat grill to medium heat
Cook corn on the grill for about 15 minutes, turning regularly
Remove from the grill and take off remaining husks (be careful as you will be surprised at how hot the corn actually is!!)
Increase heat to medium-high. Return corn to the grill, turning often, until grill marks appear.
Cook steaks, breasts, chops for 3–4 minutes on each side, depending on thickness and desired doneness.
Serve grilled meat and corn topped with flavoured butter cut into rounds.
