Granny’s Vacherin Fribourgeois Baked Apples
Adapted from a Swiss Marketing recipe
Ingredients:
160 g Vacherin Fribourgeois diced (divide into eight servings)
4 Granny Smith apples
40 g butter
25 g hazelnut or almond powder
20 g breadcrumbs
Preparation and Cooking:
Preheat your oven to 350o F
Cut apples in two and remove core
Using a spoon remove flesh (inside of the apple) in strips, leaving 1/2 cm around the edges creating a ½ apple cup.
Mix the flesh strips with the butter and divide back into the half-apples. Bake in oven for 25 minutes in a large gratin dish or individual ovenproof dishes.
Mix breadcrumbs with hazelnut powder (divide in to 8 portions).
Once baked, add 1 portion (1/8th) of Vacherin Fribourgeois to every half-apple and top with breadcrumb mixture (1/8th).
Bake for a further 8 to 10 minutes and serve warm.
