A descriptive term for cheese, with an appealing sharpness, flavour or aroma. I will be happy to introduce you to a number of cheeses that can be described this way. Some of them have been acquired since my trip to France! Aged, unpasteurized and Blue-veined cheeses are sometimes described by this term.
