Open Faced Applewood Cheddar Sandwich
A king of sandwiches!
Top with your favourite pickle to serve.
Serves 4
Ingredients
1 par-baked baguette loaf (Farmhouse, 9 grain or Brioche available at the Cheese Shop)
1 tbsp extra virgin olive oil
2 tbsp mayonnaise
1 apple (whatever is your favourite), cored and thinly sliced
100g Prosciutto (available at the Cheese Shop) or any thinly sliced sandwich meat
300g Applewood smoked cheddar
I like to add a thinly sliced pickle or hot sliced peppers
Preparation and cooking:
Preheat your oven broiler to medium hot
Cut the baguette in two and then slice the two pieces in half horizontally (to give you 4 pieces)
Place on a cooking sheet
Brush with olive oil then grill until golden and slightly crispy
Spread a little mayonnaise over each toasted piece
Top with a mixture of apple slices, prosciutto and cheddar slices
Return to the grill for 2 minutes until cheese just begins to melt
Serve with your favourite garnish
Pair:
Excellent for a quick lunch or dinner and just for fun add a bowl of your favourite soup topped with some grated parmesan cheese!
