Annatto

I am often asked “what makes a cheese yellow/orange”? The answer is: a natural vegetable dye is used to give many cheese varieties, especially the Cheddars, a yellow-orange hue. Annatto is an odourless, tasteless vegetable dye and is not a preservative.
